Introducing Master Chef, Paul Lay
Paul Lay began his
cooking career working for chef Melinda Waters in her award winning restaurant "Waters Wine and Food"
in Bairnsdale Victoria. Twelve months later he moved to Melbourne
and joined "Maria and Walter's", then rated best BYO Restaurant in Australia.
Two years further on and Paul went abroad to to gain international
experience in Britain and America. On returning to Melbourne he was
appointed as a senior chef for celebrity chef Iain Hewitson who was
regarded as a leading innovator in modern cuisine. During his time in
the Hewitson stable Paul Lay held positions as Head Chef at "Alphington House
Winebar", Chef in Charge at Sydney's "Last Aussie Fishcaf" and
Executive Sous Chef at Iain's "Memories of the Mediterranean" located in
downtown Melbourne's 5 star Rockmans Regency Hotel.
Paul was also part of the Iain Hewitson team which revamped the famous Melbourne eating institution, "Tolarno's" in St Kilda.
In the mid 90's Paul decided to take a break from cooking. He moved to
the fishing village of Bermagui on the south coast of NSW. However his
rest and recreation plans were soon disrupted when he met Keith Newbold
who convinced him to join a new restaurant venture subsequently named "Saltwater at Bermagui".
This restaurant became highly acclaimed with excellent reviews in Gourmet Traveller Magazine and the Sydney Morning Herald.
The restaurant business is a very demanding way of life. In due
course Paul and Keith needed time out to replenish their creative juices
and work up some some brand new taste sensations.
Now,
fully rested and re-charged, the Lay and Newbold team are proud to
present Nambucca Heads' latest "must visit" dining location....
